Sugar Cookies!

Tonight I made sugar cookies with the kids. I use a recipe that doesn’t require the dough to be refrigerated, so it’s great to do with the kids because you can make the dough and start making cookies right away.

Here’s the recipe:

1 cup butter
1 cup sugar
1 large egg
1 teaspoon vanilla
2 teaspoons baking powder
3 cups flour

Preheat oven to 400°. In a large bowl, cream butter and sugar with an electric mixer. Beat in egg and vanilla. Sift baking powder with flour. Add flour mixture, 1 cup at a time, mixing well after each addition. The dough will be very stiff. Blend in the last of the flour by hand. Do not chill dough. Bake 8-10 minutes or until cookies are lightly browned. removed cookies to cooling grid to cool completely.

A note: I find that if it’s too dry to add a little bit of water, about a teaspoon at a time, to get the dough to stick together.

This glaze makes them sooo yummy. Sometimes I’ll color the glaze and leave them like that, other times I’ll add decorating icing.

Sugar Glaze

1 cup powdered (icing) sugar
2 tablespoons water
1 tablespoon light corn syrup

Stir ingredients together well. If desired color with Wilton’s Icing Color. Stir often during use to prevent a mottled look on the cookie. To use, brush cookie with a pastry brush and let dry to at least one hour before decorating.
